While strolling through the frozen-food section at my local Trader Joe’s, I found these bags of frozen Mashed Sweet Potatoes. As a vegan, I didn’t get my hopes up when I turned over the package to read the list of ingredients. I was expecting to see butter and cream but squealed a little when I saw that the only ingredient is sweet potato!
When you open the bag, you’ll see tiny frozen discs of mashed sweet potatoes, which makes it easy to warm up a small portion. They taste incredibly smooth like a puree, which I can only attribute to them being blended instead of just mashed. They’re so damn good! And while it’s easy enough to bake a sweet potato in the oven and mash it myself, I can’t beat the convenience of having a bag of these frozen mashed sweet potatoes in my freezer.
I like to warm up a small bowl to eat on them own, but I’ve also discovered some healthy ways to use them in my recipes to add naturally sweet flavor, creaminess, and fiber. Maybe seeing these ideas will inspire you to pick up a bag to keep on hand in your freezer!
